Popeye loved his spinach. I don’t. Its not that I hate it exactly but it doesn’t seem very exciting. So of course it simply has to be good for you. There are only so many times you can eat it in palak paneer. Moving on to this recipe, its creamy, its cheesy, it is full of vegetables (not counting the spinach) and it looks like something out of a restaurant. What’s not to love? So here’s the recipe.
12-14 biggish spinach leaves
1 cup sweet corn (fresh or frozen)
2 cubes of any processed cheese
2 small cups of milk
1 tablespoon all purpose floor
1 tablespoon butter
1 tablespoon tomato ketchup
Pinch of black pepper
Pinch of oregano
Salt as required
Walk the spinach leaves gently and blanch them. About five minutes should do it. Remove and place carefully on a plate. In a pan, heat some oil. When the oil is hot, add chopped carrots, chopped capsicum and corn. Cook with lid on for about 8-10 minutes. Once the vegetables become tender add grated cheese, tomato ketchup, oregano and black pepper. Let everything cook together for another 5-7 minutes. Check for salt and add as per required. Finally put in some chopped coriander for that lovely aroma. Now to make the white sauce. In a pan add butter. Once it melts pour in milk and the flour. Stir constantly so no Lumos are formed. Switch off the flame once the mixture thickens.Now lightly drizzle a baking dish with oil. Spread the veggies mixture on each spinach leaf and then gently roll it in the shape of a cigarette. Transfer the rolls to your baking dish. Next pour the white sauce on top. Sprinkle some oregano or italian seasoning and finish with tomato slices and some olive oil on top. You can also top it with olives, broccoli or cherry tomatoes. Bake it in the oven till the tomatoes shrivel up a bit and the top looks golden. Delicious spinach, yes you heard it right, is ready to be gobbled!
